הג שבועות שמח - Hag Shavuot Sameach - Happy Pentecost!

Shavuot is the Hebrew name of the Feast we know as Pentecost.  Both words come from God's command to count 7 weeks or 50 days from Passover and then to celebrate the end of the harvest.  This year Shavuot starts at sundown on 7th June and concludes at sundown on the 8th.  There are many traditions associated to this Feast, one of which is to eat dairy products.  There are various suggestions as to the reason for this tradition but in keeping with the season, we thought you may be interested to try your hand at Israeli Cheesecake!

250 grams biscuits (a plain vanilla cookie)
4 tablespoons butter (melted) 500 g of 5% cottage cheese
1/2 cup sugar
2 eggs
1 teaspoon vanilla
2 tablespoons flour
200 ml sour cream
1 teaspoon vanilla
2 tablespoons sugar
Crush biscuits into crumbs using a food processor. Pour butter onto crumbs. Mix well. Press on bottom of pie pan. Combine 5% cheese, 1/2 cup sugar, 2 eggs, 1 teaspoon vanilla, 2 tablespoons flour. Pour over cookie crust. Bake 275 ° - 300 °F for 20 minutes.
For topping: combine sour cream, vanilla and sugar. Pour over cheese cake. Bake 5 more minutes. Chill and serve. Wait for "This is great! Can I have the recipe?"
